Dashi is a ‘culinary cornerstone’ in Japanese cooking. It is a stock that is made from water, Kombu (kelp) and Katsuoboshi (dried flakes of the Bonito fish). Dashi is used as a component in many sauces and marinades, adding what the Japanese call ‘umami’ taste into dishes.
At Dashi Japanese Alresford we have extensive knowledge and passion for Japanese ingredients, techniques and tastes. It’s a very different cuisine to European and even other Asian cuisines with an eclectic mix of preparation and almost artistic presentation.
Although predominantly fish and sushi, our menu also includes lots of different types of cooking including steamed and grilled as well as a variety of vegetables and meats.
Dining the Japanese way is also different - in stead of starters, mains, desserts, it’s more like tapas. We encourage you to order and share a few items at a time and try from different sections of the menu. The result is a more leisurely dining experience.
